I don't know any specific commands, but the steam console has an auto-complete feature, so spend some time "finding" the codes...

I usually just play the whole demo from start to end and record it all using fraps (http://fraps.com), then using a movie editor I can then control what I want to see/ not see, and then edit from there... the viewdemo is kind of buggy using the control panel, so I stopped screwing around with it...
